This recipe came about last night in a rather strange way. My husband and I were out with a bunch of his college frat brothers. After quite a few bourbons and beers, everyone decided to come back to our apartment to hang out. Being the Suzie Homemaker that I am, I felt like I needed to put out food for everyone immediately. Problem was, I hadn't prepared to have people over and therefore had not done any food shopping.
Out of what I had in the fridge, I came up with this super easy dip, which literally lasted all of 5 seconds in front of 4 hungry guys. So today, I decided to re-make this dip, and write down the quantities of ingredients.... it's the easiest and tastiest concoction and great for a quick party dip!

Ingredients
- 8 oz Cream Cheese
- 1 Cup shredded Cheddar Cheese
- 2 T minced Chives
- 1/2 Teaspoon Smoked Paprika
- Pinch Salt and Pepper
Directions
- Preheat your oven to 375 degrees. In the bowl of a stand mixer, fitted with the paddle attachment add in all your ingredients. Process at a high speed for about a minute until all the ingredients are incorporated and fluffy.
- Transfer the contents of the bowl to a mini dutch oven or small baking dish and bake for 20 minutes. Serve with nachos/chips immediately.
